These heavenly little treats are super easy to make and bursting with sweet peanut butter flavor. With only four ingredients, you’ll be able to whip these cookies up in a snap and impress your friends! No one will ever be able to guess they are vegan and gluten-free. They are chewy and simply divine. Enjoy!
Ingredients, makes 10 servings
1 cup raw pecans
1/2 cup PB2 Powdered Peanut Butter + 1/4 cup water
7 medjool dates, pitted and chopped
1 1/4 tsp vanilla extract
1. Add PB2 and water to small mixing bowl and stir until you have a peanut butter consistency.
2. Combine all ingredients in high-speed blender and blend until the mixture becomes a dough-like texture.
3. Roll into tablespoon-sized balls, and press down with a fork to flatten and create a crisscross pattern.
4. Store in the refrigerator for up to a week!
