Ingredients, serves 1–2

Salad
1 cup green lentils, rinsed and drained 1?2 onion, chopped (1?4 cup)
1/4 cup cherry tomatoes, halved

Dressing
1 tablespoon extra virgin olive oil 1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Sea salt and freshly ground pepper to taste

Instructions

Prepare lentils according to package directions. Set aside.
Make dressing: In a bowl, whisk together mustard, juice, vinegar, and oil.
Pour dressing over lentils and add onion and tomatoes. Mix well. Season with salt and pepper. Serve.
