Ingredients, makes 10 tacos

1 cup uncooked lentils, rinsed and drained
2 large onions, diced (about 2 cups)
2 tablespoons minced garlic
½ jalapeño, diced
One (1.25-ounce) package taco seasoning
2 cups vegetable stock
10 (6-inch) corn tortillas

Toppings

Tomatoes, diced
Lettuce, shredded
Guacamole
Jicama, peeled and shredded
Salsa
