Vegan Dessert Recipe: Dr. McDougall’s Oil-free Brownies

These are served the first night of The McDougall Program for dessert, with Vanilla Soy Ice Cream. People line up for second helpings! Remember, these are a rich treat for a special occasion. Prep: 15 minutes Cook: 30 minutes

Ingredients, makes one square pan

1 cup unbleached white flour
2/3 cup reduced fat cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup cashews or walnuts, chopped (optional)
1 cup prune puree
1 cup organic cane sugar
1 tsp vanilla
2 Tbsp egg replacer mixed in 1/2 cup water
