Vegan Lunch Recipe: Quick BLT Sandwich

A bacon-free world is a vegan’s dream!  Here’ the vegan version of a BLT that’s just as yummy and satisfying as the original.

Ingredients, Makes 2 servings

1 tsp. olive oil
2 slices vegan bacon
2 slices whole grain bread
1 Tbsp. vegan mayonnaise
1 small tomato, sliced
Spinach, romaine, or other dark leafy salad greens
1/2 avocado, sliced (optional)


• Heat the olive oil in a small skillet over medium heat. Add the vegan bacon and cook until golden on both sides.
• Meanwhile, toast the bread. Spread with the vegan mayonnaise and top with the “bacon,” tomato, greens, and avocado.
