Vegan Recipe: Quinoa Citrus Salad

This recipe is great for lunch, or a side dish at dinner. It’s also fantastic to keep in the fridge as leftovers to take to work. The citrus dressing is delicious and makes any salad healthy and tasty.

Ingredients, Serves 2 as a meal or 4 for a side dish

1 cup fresh chopped pineapple (or canned)
1/4 cup chopped scallions
1 orange, peeled and chopped (or canned mandarin oranges)
1 cup bell pepper (any color you like), diced
1 cup black beans
1 cup quinoa
1 cup pecans
1/4 cup citrus dressing

Citrus dressing:

1/2 cup fresh squeezed orange juice
1/8 cup fresh squeezed lemon juice
2 tbsp agave
1 garlic clove, minced
1/2 tsp salt
1/4 tsp ground black pepper


– Add all of the salad ingredients to a bowl, toss with the dressing. Chill until ready to serve. Give it a quick stir before you serve it.
– Can be made up to 1 day ahead of time.


– Place all ingredients in a jar with a lid and shake for about 20 seconds.
– Store in the fridge for up to 1 week, and shake before dressing salad.
