After craving banana walnut muffins for over a week, VeganSmart SuperFan Jaclyn decided to create a vegan version of Starbucks banana walnut muffin which uses all animal products in their pastries.
1/2 c gluten free flour
1/3 tsp baking soda
3 tbsp Vanilla VeganSmart
1 tbsp water
1/2 tbsp flax seeds
1/ 2 tsp vanilla extract
2 tbsp coconut oil
1 1/2 tbsp peanut butter
Blend in food processor then pour batter into muffin tins
Bake at 350 for 10-12 minutes until fully cooked.
The end result will be soft and delicious.
