Vegan Breakfast Recipe: Scrambled Tofu

This breakfast dish from The Fire Driven Life contains a similar amount of protein as eggs, minus all the cholesterol and saturated fat.

Ingredients

2 green onions, chopped
1 cup firm tofu, crumbled
1/4 tsp turmeric
1/4 tsp garlic powder
1/8 tsp ground cumin
1/8 tsp black pepper
1 tsp Bragg’s Liquid Aminos

Instructions

Heat a skillet and sauté the green onions for 3 minutes, then add the remaining ingredients and cook for 3-5 more minutes.

Notes

Turn into breakfast tacos by filling corn tortillas with the scrambled tofu and adding topping options such as: sliced mushrooms, salsa, diced green peppers, diced tomatoes, chopped onion, black olives, shredded vegan cheese, etc.
