Markus Basic Kale Salad
Serves 2

1 head kale
1 thick slice fresh pineapple, cubed
1 avocado, cubed
1/2 red onion, cubed
3 dates, pitted and cubed

2 tablespoons olive oil
2 tablespoons toasted sesame oil
3 tablespoons apple cider vinegar
1/2 teaspoon coarse grind Celtic sea salt (Markus recommends Celtic sea salt because it’s more flavorful than Himalayan.) pinch black pepper

Tear kale into small pieces. Place all salad ingredients in bowl and toss. Add dressing. Top with pine nuts and pumpkin seeds, if desired.

Green Crunch Salad
Serves 1

1 large kale leaf, rolled up and sliced
1/2 tomato, quartered
few slices purple onion
1/4 avocado, cut in desired shape
1/3 cup crumbled kale chips (I use dehydrated kale leaves)

Basic Dressing
2 teaspoons olive oil
1 teaspoon lemon juice
1 teaspoon apple cider vinegar
1/2 tablespoon spirulina powder
salt & pepper to taste

Place salad ingredients in bowl and toss. Add dressing then sprinkle the spirulina powder evenly on top. Finish with salt & pepper.
