Vegan Dessert Recipe: Raw Carrot Cake

Chef Jaime Chavez creates a sinfully delicious Raw Carrot Cake that is both organic and vegan. Not to mention this indulgent, yet clean-eating, dish is extremely easy to make and doesn’t require an oven!

Ingredients, Serves 2

2 cups dates
½ cup coconut oil
2 tsp. vanilla
½ tsp. salt
4 cups rolled oats
2 cups shredded carrots
½ tsp. cinnamon
1 cup walnuts
Cashew custard frosting (recipe follows)


Blend the dry ingredients in the robot-coupez and add the coconut oil.
Compress the mix into squares.

Cashew custard frosting


1½ cup soaked cashews
½ cup agave syrup
1 tsp. vanilla extract
1 cup coconut milk
½ cup coconut oil
0.5 oz. lemon juice


Blend the cashew
Add the agave syrup and vanilla extract
Add the coconut oil and lemon juice
Add the coconut milk
Cool mixture down in a pastry bag
