Vegan Recipe: Carrot Soup Za’atar with Smoked Paprika

With temperatures starting to cool off, here is a quick and easy recipe from raw food pioneer, Matthew Kenney. This carrot soup is the perfect way to warm up this fall and winter!

Ingredients, Serves 4-6

1lb carrots
1 tablespoon olive oil
1/8 teaspoon ground cumin seed
1/8 teaspoon ground fennel seed
1/8 teaspoon ground peppercorn
1/2 teaspoon coriander seed
1/8 teaspoon caraway seed
2 bay leaves
1 quart vegetable stock
1 teaspoon salt
1 shallot
2 tablespoons lemon juice
1 lemon, zested

Instructions

– Preheat the oven to 375. Peel and cut the carrots in large pieces. Toss the carrots in olive oil and salt. Roast the carrots at 375 for 45 minutes.
– Peel and slice the shallot
– Saute the shallot in olive oil and the spices
– Add the stock, salt and carrots to the pot
– Bring to a boil and then add the bay leaf and lower to simmer for 30 minutes
– Remove the bay leaf
– Season with lemon juice and zest
– Blend until smooth
