Ginger and Chai-Spiced Suncatcher Ornament Cookies

Chai spices and crystallized ginger give these suncatcher cookies extra zing and sparkle. They can be made year round, but they are especially fun to use as edible ornaments.

Ingredients, Makes 2 dozen, 3″ cookies

1/4 cup non-hydrogenated vegan butter
1/4 cup applesauce
3/4 cup vegan sugar
1/2 cup unsulphered molasses
1 tsp. cinnamon
1 Tblsp. ground ginger
1/2 tsp. ground cardamom
1/2 tsp. freshly ground pepper
1/4 cup finely chopped crystallized ginger
3 cups whole wheat pastry flour
2 tsp. baking soda
water as needed

Preheat oven to 325 degrees

  1. Cream butter with applesauce, sugar, and molasses in a food processor.
  2. In a separate bowl, sift together spices, flour, and baking soda. Add to butter mixture and blend well.
  3. If mixture is dry and crumbly, add water, 1 tsp. at a time. If dough is sticky, add flour until dough is elastic and forms a ball. Wrap dough in plastic wrap and refrigerate for at least 2 hours.
  4. Roll out dough on a lightly floured board to 1/4″ thickness. Use daisy or other cookie cutter to cut into desired shapes.
  5. Carefully transfer cookies to a cookie sheet lined with parchment paper or a Silpat.
  6.  Use a 1″ bottle cap or something similar and press into center of cookie to make a hole. Re-roll extracted dough and use for remaining cookies.
  7. Fill holes with colored ground hard vegan candies or lollipops (see Notes). Bake cookies for 8 – 10 minutes. For ornaments, make a hole at the top of each cookie with a chopstick before they cool.

Notes: Hillside Candy GoOrganic offers a variety of hard candies, most of which are vegan. Place hard candy in a baggie. Use a rolling pin to crush until ground.
