  • I box Explore Cuisine Mung Bean Rotini
  • 2 T. olive oil
  • ¾ c. green peas, cooked
  • small handful of fresh mint, chopped (reserve a few sprigs for garnish)
  • salt and fresh ground pepper to taste


  • 5 medium strawberries, sliced
  • 5 cherry tomatoes, sliced
  • plus fresh basil, chopped
  • 2 round red radishes, sliced thin and/or 2 oz. feta cheese, crumbled


  1. Cook rotini according to package instructions
  2. Toss rotini with olive oil, peas, mint, salt and pepper
  3. Add optional ingredients if desired
  4. Garnish with mint sprigs
