Chef Katherine Frelon is delighted to announce ‘Explore Your Market’, a series of monthly cookery courses she will be hosting at The Cookhouse in London’s oldest and most famous markets, Borough Market. Katherine will show her students how the best ingredients can be found in your local fresh food market no matter what your personal preferences, tastes or dietary requirements.
Katherine brings a wealth of experience and having worked in numerous restaurants around the world including Michelin Star kitchens, she is also a longstanding regular Demo Chef for Borough Market. Having written her own cook book titled “Shop, Cook, Eat”, inspired by her lifelong passion for markets; Katherine shares how to source the best seasonal produce, and how crafting the perfect pantry can lead you through the year no matter what country you’re in, and whilst splitting her time between London, France and the US, she’s not short on inspiration.
The series will begin with a vegan cookery course, showcasing how cooking a plant-based diet can be just as versatile and interesting as cooking with meat. Other courses in the series will include a Mediterranean course, great for perfecting those summer dishes, and an Asian course showing how to make seemingly complicated dishes incredibly easy. The one day Vegan courses will be held on Friday 6th April & Saturday 7th April 2018 between 9:30am and 16:30pm and tickets cost just £95. Guests will not only have the opportunity to watch Katherine make the dishes, but assist in the creation of each course and will also be able to walk around London’s famous Borough Market and choose the produce from a selection of award winning traders.
Starting at The Cookhouse in Borough Market for 9:30am, Katherine will introduce the day by outlining pantry essentials and the importance of a balanced vegan diet. Katherine will then lead guests around the market, using her wealth of knowledge and vast experience with Borough, to show how to select the best and freshest produce.
Following this Katherine will prepare lunch in front of guests with a selection of wine. In the afternoon guests will have the opportunity to cook alongside Katherine and learn with a hands on approach, focusing specifically on simple suppers, crisp salads and delicious desserts. Guests will then have the chance to discuss topics of interest before they enjoy the meal freshly prepared by themselves and Katherine.
There will be a wide selection of recipes that Katherine will demonstrate step by step. For lunch, the demo includes how to make Courgette and Butternut Quiche with Yemenite Hot Sauce, Coriander and Parsley, and in the afternoon, Katherine will be revealing her secrets of how to make dishes such as Super Wholefood Salad with Cannellini Tahini, Quinoa, potato falafels with satay sauce, Fragrant Jeweled Tabbouleh, and Roasted Spiced Pineapple with non-dairy Caramel Ice Cream to finish.
