Vegan Recipe: Quinoa Vegetable Stew

This stew is so warming and satisfying on a chilly day. True comfort food, yet so healthy for you!

Ingredients
1/2 large yellow onion, chopped
1 large carrot, chopped
1 large celery stalk, chopped
3 cloves garlic, minced
1.5 lb. purple, red, yellow fingerling potatoes, cut into bite-size pieces
1/2 cup quinoa
1/2 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp ground turmeric
1/2 tsp ground black pepper
8 oz (1/2 of 16oz. package) frozen butternut squash, thawed and mashed
4 cups vegetable broth
2 cups baby spinach (or whatever amount you desire)
sea salt to taste

Directions
Add onion, carrot, celery and garlic to large pot with small amount of water and cook to soften (about 5 minutes)
Add the potatoes and stir for 3 minutes
Add quinoa, oregano, thyme, turmeric and black pepper
Turn heat to high and bring to a boil, cover pot and reduce heat to simmer, 20 minutes
Add butternut squash and baby spinach and cook 5 minutes longer uncovered
Let stand for 10 minutes before serving
