Vegan Dessert Recipe: Apple Coconut Barfi

Apple barfi

Barfi is  an Indian sweet usually made from dairy products. This is an easy-to-make vegan barfi with 5 simple ingredients that have a soft texture, melting in the mouth.

Ingredients, Serves 6
1 cup apple, thickly grated with skin
1 cup desiccated coconut
½ cup walnut
¼ tsp cinnamon powder
10 soft dates, soaked and deseeded
Chopped pistachio & almonds
Rose petals

Soak the walnut for 30 mins.

1. In the pan, dry roast the walnut on slow flame for 5 mins. Then switch off the stove, add the coconut and roast it until the pan is hot.
2. In a blender, add coconut, dates, cinnamon powder, and walnut and blend it until sticks to each other.
3. In a bowl, add the grated apple and the coconut dry mixture and mix it well.
4. Take a small square shape mould or 7”inches diameter thali and spread a bakery paper or parchment paper, pour the mixture and spread it using a spatula.
5. Garnish with chopped pistachio, almond & rose petals.
6. Keep in the refrigerator for 1 hour and then cut into square shape pieces.
7. Always store in an air tight container in the fridge and stays up to 4-5 days.
