This is the time of year that we spend with family and friends, and what better way than to lead by example by sharing the gift of healthier choices without sacrificing flavor?
3 Cups Whole Fresh Cranberries
1 Cup Water
1 Orange (zested and Juiced)
1 Vanilla Pod with beans scrapped out or 1 teaspoon Vanilla Extract
2 Whole Cinnamon Sticks
2 Whole Star Anise
1.5 Cup Brown Sugar (can swap out for Maple Syrup) I like to use brown sugar, the molasses in the brown sugar gives it a great flavor
Toss all ingredients into a deep sauce pan or pot. Allow to simmer on medium heat for about 10 minutes, if mixture starts to bubble over lower the temperature. Once most of the berries have burst, lower the stove and simmer for another 10-15 minutes until sauce thickens and becomes syrupy. Allow to cool to room temperature and transfer to an airtight container. Place in the refrigerator.
NOTE: This recipe can be made in advance. Extra cranberry sauce can last in the refrigerator for 10-14 days in an airtight container. I love creating new recipes and spreading it on nut butter or savory holiday sandwiches.
