The Retreat Costa Rica is a luxury wellness boutique resort and spa founded by celebrity chef, bestselling author and health and wellness life coach Diana Stobo in 2015. Located at the base of a quartz mountain outside the town of Atenas, Alajuela, in Costa Rica and 30 minutes from San Juan International Airport, the resort offers guests a transformational experience in a nurturing environment. The Retreat includes elegant accommodations, a spa and healing center, two farm-to-table restaurants, a yoga studio, two saline swimming pools, organic gardens, a coffee plantation, sweeping views and hiking trails.
The Retreat Costa Rica recently opened its Gratitude Lounge Café adjacent to the spa’s Gratitude Lounge. The Café presents an appealing plant-based menu of snacks, smoothies, light lunches and sunset platters with a select listing of organic and biodynamic wines. Menu items include: Portobello Cassava Tacos, Sloppy Jacks made with cashew bread and jackfruit with papaya-bbq sauce, Vegan Crab Cakes made from hearts of palm, and more.
The Retreat Costa Rica’s founder and owner Diana Stobo, a celebrity chef, bestselling author and health and wellness life coach, has designed all the menus at this world-class healing retreat, dedicated to renewing mind, body and soul, to offer enjoyable, delicious, organic and sustainably sourced nourishment all day and evening.
Menus throughout The Retreat are based on an anti-inflammatory diet incorporating organic produce mostly grown on the resort’s own soil-rich organic farm, which faces south of a crystal mountain and is watered by high energy crystal-infused spring water. Locally and sustainably raised fish, fowl, beef and lamb are served. The kitchen is grain free, dairy free (with occasional goat yogurt and cheese) and uses no refined sweeteners.
From the full a la carte menu at Gratitude Lounge Café – Tea and Wine Bar, the snack, midday and light fare food and beverages satisfy guests with such temptations as vegan chorizo and cheese nachos, jackfruit sliders, portobello and cassava tacos, grain and fruit bowls, along with homemade nut milkshakes, fruity granita/slushies, biodynamic wines, rare teas, matcha and beet lattes, various other healthy snacks, and drinking water and frescos are enhanced with garden-fresh healing herbs.
