African Stewed Kale

Peanut butter fans rejoice! This unique and memorable dish from The Fire Driven Life features a distinctive combination of peanut butter and tomato.

Ingredients

2 shallots, diced
3 garlic cloves, minced
1 Tbsp ground cumin
1 Tbsp ground coriander
28-ox. can of crushed roasted tomatoes
2 heads kale, 1 regular kale and 1 dinosaur kale
1/2 cup creamy peanut butter
1/2 cup fresh cilantro

Instructions

Heat the shallots, garlic, cumin, coriander, tomatoes and kale together in a pan until the kale is tender, about 15 minutes. Stir in the peanut butter and cilantro and cook for 10 more minutes. Season and garnish with a little more cilantro. Serve over over a bed of couscous or rice.
